Australian mango season is in full swing and to celebrate, Mr KP Mangoes teamed up with one of our favourite creators of deliciously healthy recipes, Leah Itsines!  Leah’s Chipotle Chicken and Mango Salsa recipe is fresh, tasty and perfect for summer. The chipotle chicken seasoning makes enough for 1kg of chicken – store it in an airtight container and you’ll have some left over ready to whip this up the next time.

Serves 2

Ingredients

For the chicken & seasoning

450g of Chicken tenderloins
2 Tbsp Chipotle powder
1 Tbsp. Paprika
1 Tbsp. Mustard powder
1 Tbsp. Cumin
1 Tbsp. Salt
1 Tsp Pepper

For the salad
1 Ripe Mr KP mango
1/2 Red onion – finely diced
10 cherry tomatoes (cut into 1/4 pieces)
1/4 Cup Mint
1/4 Cup Coriander
1 Cucumber – finely diced
1/2 Lime juice

Method

For the chicken and seasoning
Add chipotle powder, paprika, mustard powder, cumin powder, salt and pepper into a small bowl and mix.

Coat chicken tenderloins in half of this powder and save the rest for during the week!

Cook chicken on a hot skillet until cooked through.

For the salad

Add mango, cucumber, red onion, tomato, mint, coriander and a sprinkle of lime juice into a large bowl and mix.

Add chicken to the bowl and EAT!

Hint

The chipotle chicken seasoning mix makes enough for 1kg of chicken, so save it in an airtight container for next time you make this recipe!
