Fresh Prawn and Mango Salad by Leah Itsines

Australian mango season is in full swing and to celebrate, Mr KP Mangoes teamed up with one of our favourite creators of deliciously healthy recipes, Leah Itsines!  Grilling your mango brings out all the sweetness – which is why its so perfect to add to your summer salads. This salad serves one, but you can easily triple the recipe and take it to your next party to show all your guests up with your amazing cooking skills!

Serves 1

Ingredients

For the prawn salad
6 Fresh prawns – de-veined & scaled
1 Fresh Mr KP Mango – Cheeks cut into thick slices
1 Cup of baby spinach
1/2 Red Onion – thinly sliced
1/2 Avocado
1 Tsp. Coconut oil

For the dressing
1/2 tsp. Organic Honey
1/2 tsp. Lemon Juice
1/4 tsp Dijon Mustard
2 tsp Olive oil
1 Tsp. Poppy Seeds

Method

On a hot pan with coconut oil, grill the mango pieces until they become soft.

Add spinach, onion, avocado into a big mixing bowl. Add in fresh prawns.

Add all ingredients under “dressing” to a bowl and mix throughly.

Add grilled mango to the salad and pour over dressing.

Top with some fresh coriander.
