Mango Chilli Lime Salad

The stunning simplicity of this Mango Chilli Lime Salad has us completely hooked! A feast for the senses, it is the perfect side for lamb or chicken dishes, and can easily be adapted as a light main meal for two.

Serves 4 (as a side dish)


3 mangoes
Handful mint leaves
½ red onion, peeled
½ long red chilli
juice of 1/2 a lime
2Tbsp Extra Virgin Olive Oil
Salt and pepper

Dice the mangoes and place into a salad bowl.

Slice the onion as finely as possible. Remove some of the strong onion flavour by briefly rinsing in warm water.

Use a teaspoon to remove the chilli seeds, then slice the chilli as finely as possible.

Combine the mango, onion and chilli in the salad bowl with the mint leaves. Lightly dress with 2 tablespoons of good quality extra virgin olive oil, mixed with a squeeze of lime juice, and seasoned with salt and pepper.

Serve this Mango Chilli Lime Salad as a side with lamb or chicken. Hint: It goes particularly well with our Mango-Glazed Lamb Skewers!
