Dice the mangoes and place into a salad bowl.
Slice the onion as finely as possible. Remove some of the strong onion flavour by briefly rinsing in warm water.
Use a teaspoon to remove the chilli seeds, then slice the chilli as finely as possible.
Combine the mango, onion and chilli in the salad bowl with the mint leaves. Lightly dress with 2 tablespoons of good quality extra virgin olive oil, mixed with a squeeze of lime juice, and seasoned with salt and pepper.
