Mango Coconut Popsicles
No icecream maker? No problem! With no processed sugar, these super-simple mango coconut popsicles are a deliciously cool and healthy treat for hot summer days.
Makes 6-8 popsicles
Ingredients
2 Cups Mango chunks – divided in 2
1 Can Coconut Milk
1 Can Coconut Cream divided in 2
3Tbs Honey
1 Lime – Juice
Shredded Coconut Flakes
Method
In a blender, combine half mango chunks, coconut milk, half the coconut cream, honey and lime juice.
Blend until smooth. Stir through remaining mango chunks and pour into popsicle moulds.
Freeze for 4 hours or overnight.
To serve, drizzle with remaining coconut cream and sprinkle with coconut.
