Mango Quinoa 5 Seed Salad

Mango and five different seeds (quinoa, pepitas, sunflower, sesame and chia) come together in this light, healthy, quick & easy Mango Quinoa 5 Seed Salad. Add some grilled chicken breast for a filling main meal.

Serves 4 (as a side dish)

Ingredients

For the salad
1.5 cups white quinoa
1 cup water
3 ripe mangoes
100g mesculan salad mix
2 whole avocados
20g pepitas (pumpkin seeds)
10g sunflower seeds
10g shredded coconut
5g sesame seeds
5g chia seeds

For the dressing
50ml red wine vinegar
100ml extra virgin olive oil
½ teaspoon Dijon mustard
Salt and pepper

Method

Rinse the quinoa in a strainer under cold running water. To cook, combine quinoa and water in a pan and bring to the boil. Reduce to a simmer, cover and cook until water is absorbed (approx 10 minutes). Fluff with a fork, then return quinoa to the strainer and rinse under running water until cool.

Cut the mangoes in half, then remove the flesh with a large kitchen spoon, using it to scoop out the whole cheek. Slice both cheeks into strips.

Halve the avocados and remove the seed; remove the flesh with a large kitchen spoon, then cut it into strips.

For the dressing, combine all the ingredients in a jar with a screw top lid. Shake well to combine.

Dress the salad leaves with a couple of tablespoons of the dressing and arrange on a salad plate. Scatter the cooked quinoa over the leaves; then top with the avocado and mango strips. Garnish by sprinkling the seeds and coconut on top to serve.
