Mango Salad with Prosciutto and Balsamic Glaze

Fresh kensington pride mangoes take the spotlight in this sweet mango salad. It’s perfect for a light meal, and also works as a side.

Serves 4


2 Mr KP Mangoes – peeled and sliced

8 prosciutto slices

12 baby bocconcini

3 cups rocket

1/2 cup balsamic vinegar

For the balsamic glaze

Place balsamic vinegar into a small pan and bring to a simmer over medium high heat. Simmer until reduced to a sticky glaze (about 6 minutes).  Set aside to cool while assembling the salad.

For the salad

On a serving platter, layer rocket, mango slices, prosciutto and bocconcini.  Drizzle with balsamic glaze and serve.


Notes: This recipe can be simplified by using pre-made balsamic glaze from your nearest major supermarket.
